An Irish Dinner

Last night we hosted our friends to a traditional Irish dinner. With the fire going we enjoyed champagne cocktails and Guinness along with wonderful hors d'oeuvres of Deb's warm artichoke dip, Jim's crab stuffed mushrooms and sushi here in our cozy living room.For dinner we served a salad of mixed Spring greens with candied pecans, sliced strawberries, dried cranberries and crumbled blue cheese. The main course was slow cooked corned beef, grilled salmon, cabbage, carrots and potatoes drizzled with melted butter accompanied by Irish soda bread and marbled rye. After dinner we enjoyed a yummy chocolate cake that my friend Jill made along with Irish coffees (thanks Dar for coming to the rescue with your coffee maker! ) and Irish apple cake out at the fire pit. It was such a nice evening with wonderful friends!
